Following triple distillation in copper stills, the whiskey is aged in ex-bourbon casks.
Distilled at The Great Northern Distillery in Ireland, Fitzwilliam Whiskeys is an independent BBC Spirits bottling.

The Great Northern Distillery

The Great Northern Distillery produces two types (and five variants) of new fill whiskey : Malt Whiskey (Triple- Distilled, Double Distilled, Irish Pot Still and Peated) along with a Grain Whiskey (primarily used for Blended Irish Whiskey). Malt whiskey is produced by batch mashing, fermentation and distillation. Grain whiskey is produced by continuous cooking and mashing, batch fermentation and continuous distillation. Raw materials for the production of whiskey are sourced from France and from the Island of Ireland. The non-GM Maize is grown in the Bordeaux region of France and shipped into the harbour in the town of Dundalk. Barley is sourced within Ireland and converted into Malt by a local Maltster.
