Once again, the Pachecos family is offering an exceptional Charanda made in the Mexican tradition and know-how from sugar cane grown on the estate in the town of Uruapan. Sol Tarasco 8 Years Full Proof is a Charanda single estate, made from pure local sugar cane juice fermented for about 5 days or more. This fermentation time fluctuates depending on the temperature and the alcohol content. This artisanal rum, protected by a Denominacion de Origen (D.O.), is distilled twice in copper stills, once at around 30% and again at around 55% before being aged in ex-bourbon casks for 8 years. Being a full proof, this rum has not undergone any modification between distillation and bottling. There is no addition of water, colouring, sugar or additives. Only a light filtration has been carried out with a filter as fine as a sheet of paper, in order to eliminate any wood residue that might be mixed in. This lot includes 2,700 bottles.
Casa Tarasco
Casa Tarasco, Uruapan Charanda, a family tradition since 1907. The Pacheco family has been producing Charanda in the city of Uruapan in the state of Michoacán, Mexico for more than 113 years. The ‘Uruapan’ brand takes its name from the hometown of the Pacheco family, which has a long history in the region. However, the family’s involvement with distillation goes back even further. In 1908, Don Cleofas Murgia decided to switch from mezcal production to distilling sugar cane, as mezcal was not particularly popular and sugar cane distillates offered more profitable, visible activities. Miriam Pacheco now runs the family company, continuing the tradition of Charanda production. The Pachecos’ desire to protect and preserve the local tradition of sugar cane distillation was highlighted in 2003, when the family secured the creation of a D.O. (an appellation of origin) protecting all Charanda producers.
