Appareance
Clean, crystalline, fullbodied.
Nose
Predominantly fibrous, spicy and ashy to the nose. Cooked agave is well assembled with apple and apricot notes, followed by cinnamon, pepper and cloves aromas.
Palate
The taste is honest, predominantly spicy, fibrous and earthy. Sweet notes are well balanced with herbal and spicy flavors.
Finish
Its medium bouquet, great body and characteristic aftertaste remembers us its fibrous, earthy origins.

All the traditions and heritage of Mexico live in our agave plants (Agave means "in Greek"). The Tepeztate agave matures at 20 years for an optimal harvest, under extreme natural conditions. Tepeztate has thicker leaves, which contain part of the sugar. More fibrous than other types of Agave, the Tepeztate offers unparalleled organoleptic qualities. Their hearts or piñas are slowly cooked in pre-Hispanic volcanic stone pits for 3 to 4 days, under the mantle of their leaves. The agave juice is traditionally extracted by scraping the cooked piñas with a stone pulled by a mule called a Tahona. It is then fermented in oak vats and distilled twice in copper stills.
