Appareance
Clean, crystalline, fullbodied.
Nose
Moderately overcooked agave and smoky notes stand out to the nose. A subtle expressions of mandarin, orange, cherry, pineapple and pear with a touch of cumin, pepper and cinnamon aromas.
Palate
Full-bodied to the palate.
Finish
An elegant assemblage of citric and fruity flavors enrobe the agave notes of pumpkin, pepper and cinnamon, to close with notes of toffee.

All the traditions and heritage of Mexico live in our agave plants (Agave means "in Greek"). The Agave Madre Cuixe matures at 14 years for an optimal harvest, in extreme natural conditions. It is a type of Agave that has a more complex composition and develops less sugar, generating more fibre, hence its exceptional aromatic characteristics. Their hearts or piñas are slowly cooked in pre-Hispanic volcanic stone pits for 3 to 4 days, under the mantle of their leaves. The agave juice is traditionally extracted by scraping the cooked piñas with a stone pulled by a mule called a Tahona. It is then fermented in oak vats and distilled twice in copper stills.
