This mezcal is elaborated with Maguey Espadin (Agave Angustifolia) and Maguey Tobala (Agave Potatorum Zucc) and distilled three times in copper stills. Our espadin Agaves are harvested at 8 years old, reaching an optimal maturiration, while Tobalá is harvested at 12 in wild natural conditions.

Appareance

Clean, crystalline, fullbodied.

Nose

Ripe agave, pumpkin aromas with a smoky touch are elegantly balanced with citrus notes. Its fibrous character is present, followed by cinnamon and vanilla notes.

Palate

The taste is honest with a spicy and earthy character perfectly assembled with sweet notes of vanilla.

Its triple distillation results in a great body and a noble finish with a strong personality.

All the traditions and heritage of Mexico live on in our agave plants (Agave means "in Greek). Our Espadin Agaves are carefully selected by our Maestro Mezcalero and harvested at 8 years of age, having reached optimum ripeness, while the Tobalá is harvested at 12 years of age in wild natural conditions. Their hearts or piñas are slowly cooked in pre-Hispanic volcanic stone pits for 3 to 4 days under the mantle of their leaves. The agave juice is traditionally extracted by scraping the cooked piñas with a stone pulled by a mule called a Tahona. It is then fermented in oak vats and distilled twice in copper stills. For superior quality, our Ensamble Espadin-Tobalá is first distilled twice separately and then brought together for a final triple distillation.
