Crafted from ten ethically sourced, hand-harvested botanicals, Mermaid Pink Gin draws its sweet aromas from English strawberries infused with the smooth, complex flavor of Mermaid Gin, a blend of lemon peel, paradise seeds and samphire.Coming directly from the microclimate of the Arreton Valley, the strawberries used are not beautiful enough for consumers, so they are used in our gin to avoid food waste. The result is a vibrant strawberry on the nose with subtle aromatic nuances.

In contrast to the free spirit of Mermaid, the master distiller is rigorous in his control of process, time and temperature. Column stills with multiple refluxes offer a milder alcohol. The distillation process rejects a significant portion of the unstable, harsh-tasting alcohols known as "tails" or "feints," which means this gin is made from a large proportion of sweeter, flavor-balanced "hearts," creating a superior signature of smooth, fresh flavor. The slowly distilled gin is rested for seven days to allow all of the botanical aromas and flavors to mellow and marry together, then reduced with island spring water before bottling.
